1 Finely chop the black cabbage, removing the central rib.
2 Prepare the vegetable broth (with leek, carrot, celery, mushrooms and cabbage; also add the garlic, ginger, salt and fresh chilli.
3 Toast the couscous in a pan with a little oil. When the soup is almost ready, pour it directly into the pot and let it cook for a couple of minutes.
4 With the heat off, add the soy sauce or miso and mix well.
5 Remove the garlic and ginger and serve hot.
