Have you ever tasted couscous in broth? If not, you don't know what you're missing! This recipe is the right occasion to try it. Warm and slightly spicy, it will be your new comfort food for the coldest evenings.

INGREDIENTS

whole couscous 70 gr

shitake mushrooms 2

black cabbage 6 leaves approx

leek 1/2

carrot 1

celery - just enough

garlic 1 clove

soy sauce or miso - one tsp

fresh chilli

ginger - a small piece

extra virgin olive oil

salt

PREPARATION

1 Finely chop the black cabbage, removing the central rib.

2 Prepare the vegetable broth (with leek, carrot, celery, mushrooms and cabbage; also add the garlic, ginger, salt and fresh chilli.

3 Toast the couscous in a pan with a little oil. When the soup is almost ready, pour it directly into the pot and let it cook for a couple of minutes.

4 With the heat off, add the soy sauce or miso and mix well.

5 Remove the garlic and ginger and serve hot.
