Baked eggplant, easy recipe

Are you looking for a super easy to prepare side dish? Today we offer you our organic recipe of baked aubergines, a simple, tasty and light way to cook aubergines. Below, you will find the ingredients to prepare organic baked aubergines with cherry tomatoes but you just need to change just a little bit to get the version that best meets your tastes. For example, you can use good grated bread instead of cherry tomatoes to prepare tasty aubergines au gratin or, more simply, use your favorite aromatic herbs and season the baked aubergines only with a mix of spices, garlic and oil.

But let's get to the ingredients!


1 or 2 organic eggplants

300 g of organic cherry tomatoes

1 clove of garlic


black pepper




Cut the aubergines on the longest side, to obtain slices about 7/8 mm thick (not too thick nor too thin). Place them on a baking sheet lined with parchment paper, gently cut a grid on each slice and season with oil and salt. Bake in a hot oven at 200 ° C for about 15 minutes.

Meanwhile, cut the cherry tomatoes into cubes and season them with oil and salt. After 15 minutes, open the oven and add a generous handful of cherry tomatoes to the aubergine slices. Now, close the oven and let it cook for about 10 minutes.

When the aubergines are well cooked, before serving, add a sprinkling of black pepper and a few basil leaves.
